Their culture, based around the twin moons, interests me a great deal. And the fact they are cat people, which I have a weak spot for in every fantasy setting. Since I have a great interest in warfare, the strategic and tactical value of the different species of Khajiit.
The Senche, a species that goes on all fours but highly intelligent, would be an ideal shock unit. Their bigger cousins, the Senche-Raht, stand as high as two Altmer. This would translate to about four meters. As mounts these would be formidable weapons platforms and weapons in and of themselves.
The species the size of a housecat who's name escapes me could potentially be used for infiltration. I could go on and on, but you get the idea. As for a non-playable race, the Ayleids are my pick. Nakor88 made points I would make for this opinion. I really like altmer, because when I play an altmer I often try to be a nice character, an example for the rest.
When I play an assassin, a theif or an assassin-thief I go for argonians, bosmer or khajiits for their stealth and ranged weapon abilities. As I stated, I don't really have a favourite.

It always feels weird to play something I'm not so I always play a male and one of the human races, ususally the breton. Damn shadow I love playing as a snobberish high elf wizard who has to endure the ramble of the common races, whilst being generous enough to allow some of them to converse with me!

The night vision is next to useless, but it's sometimes fun to go around fighting with nothing but your claws.
Plus, you will never lose a fist fight or bar brawl. Might do an Argonian or Khajiit next play through.
